Luxury resort Conrad Maldives Rangali Island I am pleased to announce the appointment of the Italian specialist Marco Amarone as the Executive Chef of all 12 restaurants and bars on the island. Before joining the friendly resort team, Marco was involved in the development of the Cuneo restaurant, which he owned in conjunction with Marcopolo Group of Restaurants.

Marco's wealth of experience, educated at the prestigious IPSEOA Ippolito Cavalcanti School of Hospitality and Gastronomy (Naples, Italy), as well as an active member of the Italian Federation of Chefs U.R.C.L., helps Conrad Maldives Rangali Island Resort to perfect its sophisticated gastronomic palette of dishes and drinks. For many years, Marco developed his gastronomy knowledge in various countries and regions of the world, including the Philippines, Thailand, Singapore, Portugal and Bermuda, which allowed him to bring to the Maldives ideas about various culinary traditions.

Since Conrad Maldives Rangali Island resort has historically been oriented towards a healthy lifestyle and strives to offer guests a wide selection of suitable food options, Marco first consulted with leading nutritionists and naturopaths, and then actively engaged in the development of organic farming on the island and turning Mandhoo SPA restaurant into a real Mecca for adherents of a healthy lifestyle.

Mounted on stilts in the middle of the lagoon, Mandhoo SPA Restaurant is the island’s main gastronomic gem. The menu, based on the principle of five elements - air, water, fire, earth and plants - is specially designed to energize, nourish, remove toxins, relax the body and strengthen vitality using exclusively organic products grown without the use of chemical fertilizers and pesticides.

"The most important factor in creating a SPA-menu for a balanced diet is the ingredients: we use only organic products such as fresh cabbage, quinoa, bean beans, avocados and many others. The cooking process plays an equally important role, so we focus on Asian and Mediterranean cultures, where the emphasis is on processing methods that preserve all the nutrients, "explains Marco Amarone.

The difficulty in compiling the menu was that the different ingredients retain their nutritional properties and vitamins with very different cooking methods: for example, some foods are best not cooked at all, but consumed raw.

Visitors leading a healthy lifestyle and monitoring their diet can easily calculate the daily calorie intake and the number of useful micronutrients in each dish - such data is shown under each menu item. At the same time, they expect incredible gastronomic delights and an explosion of taste in each plate. Take, for example, a crab meat salad with slices of avocado, mango and grapefruit ice cream from the "air" section! Or tuna with spicy sauce, sprinkled with sesame seeds and grilled with artichoke and sweet potatoes from the "plants" section!

Among other things, the menu of the Mandhoo SPA-restaurant presents a variety of variations of the Indian lassi drink, prepared on the basis of yogurt according to traditional recipes - with fresh fruits, herbs and spices. Lassi is known for containing a high amount of digestive enzymes.

Mandhoo Restaurant is located opposite the SPA center and is open from 12.00 to 15.00 and from 19.00 to 22.30 every day, except Mondays.
